    Ingredients: 

    • 2 cups crushed tomatoes
    • 6 cups broth vegetable or chicken
    • 1 cup chopped carrots
    • 1 cup chopped celery
    • 1 small onion diced
    • 3 medium garlic cloves minced
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • salt and black pepper to taste
    • 2 bay leaves
    • ½ teaspoon dried oregano
    • ½ teaspoon dried basil
    • 5 cups spinach
    • ¾ cup orzo pasta

    Directions:

    • Melt the butter and olive oil in a large heavy-bottomed pot over the medium-high heat.
    • Sauté the onion for 2 to 3 minutes. Cook for 4 minutes more after adding the garlic, carrots, and celery.
    • Add salt and pepper to broth, crushed tomatoes, bay leaves, dried basil, and dried oregano. Bring the soup to a boil, then stir in the orzo or desired pasta.
    • Reduce to low heat and cook until the pasta is perfectly cooked, occasionally stirring to prevent the orzo from sticking.
    • Add spinach and adjust the seasoning to your liking. When the bay leaves have wilted, take them out and top the soup with freshly grated Parmesan and chopped basil (if available).
